Chanterelle is a species of golden chanterelle mushroom that is highly prized in many cuisines. It is characterized by its yellow or orange color and apricot-like aroma. The fruit body of the mushroom is broadly convex, with a flat to funnel-shaped cap that can be up to 6 inches wide. The underside of the cap has false gills that are whitish to pink in color. The stem is central, fleshy, curved, and smooth, and can be up to 3 inches long and 1 inch wide. The flesh of the mushroom is white and has no distinctive taste. Chanterelles are edible and not poisonous, and are used in the preparation of many culinary dishes. They are usually found between July and December in deciduous and coniferous forests, and are a woodland favorite.
