Tuber Melanosporum 1st class, also known as the black winter truffle, is a type of truffle that grows in the winter season. 1st class is the most popular grade of black winter truffle. Better price than the extra class and able to serve in the front of the house due to its visual attributes. 80% of the external skin has to be without imperfections, can have up to a 20% of the surface cut. Size variation is 20g to 300g and clients are able to specify desired size. It is characterized by its black exterior and a dark brown interior with white veins. The truffle has a strong, earthy aroma and a rich, nutty flavor. It is considered one of the most expensive truffles in the world and is used in many high-end restaurants.
