Tuber Melanosporum CUTS, also known as the black winter truffle, is a type of truffle that grows in the winter season. Cut truffles are typically irregular shaped truffles with more Tham 30% of the truffle being cut. It’s a very popular grade due to the better price and the ability to judge and sort the maturity. When the truffle is cut it’s easier to see inside and select the most mature ones for our clients. Perfect for back of the house preparations. It is characterized by its black exterior and a dark brown interior with white veins. The truffle has a strong, earthy aroma and a rich, nutty flavor. It is considered one of the most expensive truffles in the world and is used in many high-end restaurants.
